
The Warung, a newly opened food stall at Lau Pa Sat, is the creation of Suka, a Balinese diving guide, and his wife Juliana, a lawyer with a passion for diving. They have brought authentic home-style Balinese cuisine to Singapore.
Menu and Specialties:
- Ayam Betutu: Available in original, goreng (fried), and bakar (grilled) variations. The set ($8.90) includes satay lilit, urap, a betutu-style half-boiled egg, and portions of sambal matah and sambal embe.
- Cooking Method: The term “betutu” refers to a slow-cooking method using a rempah of 17 spices and herbs, including lemongrass, various gingers, garlic, turmeric, shallots, and lime leaves.
- Grilled Fish: A whole tilapia fish served either grilled or ‘nyat nyat’ style, available for dinner.
- Sambals: Each set is served with two types of sambal – the classic sambal matah and sambal embe, which features caramelized fried shallots, garlic, chili padi, and lime, all fried in coconut oil.
