Spicy Slow-Cooked Chili Recipe
Ingredients:
– 2 lbs ground beef (or ground turkey/chicken for a leaner option)
– 1 large onion, chopped
– 4 cloves garlic, minced
– 2 bell peppers, chopped (any color)
– 2 (14.5 oz) cans diced tomatoes
– 1 (15 oz) can tomato sauce
– 1 (15 oz) can kidney beans, drained and rinsed
– 1 (15 oz) can black beans, drained and rinsed
– 2-3 tablespoons chili powder (adjust to taste)
– 1 tablespoon cumin
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– 1/2 teaspoon cayenne pepper (adjust to desired heat level)
– Salt and black pepper to taste
– 2 cups beef or chicken broth
– 2 tablespoons olive oil
– Optional toppings: shredded cheese, sour cream, sliced jalapeños, chopped cilantro, diced avocado
Instructions:
1. Sauté Vegetables:
1. Heat olive oil in a large skillet over medium-high heat.
2. Add chopped onion and bell peppers to the skillet. Sauté for 5-7 minutes, or until softened.
3. Add minced garlic and sauté for an additional 1-2 minutes, until fragrant. Remove from heat and set aside.
2. Brown Ground Beef:
1. In the same skillet, add the ground beef (or turkey/chicken) over medium-high heat.
2. Break up the meat with a spatula and cook until browned. Drain any excess fat.
3. Slow Cooker Assembly:
1. Transfer the browned meat, sautéed vegetables, diced tomatoes, tomato sauce, drained and rinsed kidney beans and black beans to a slow cooker.
2. Add chili powder, cumin, paprika, dried oregano, cayenne pepper, salt, and black pepper. Stir well to combine.
3. Pour in the beef or chicken broth and stir again to combine all ingredients.
4. Slow Cooking:
– Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
– The longer it cooks, the more the flavors will meld together and develop.
5. Serve:
– Once the chili is done cooking, taste and adjust seasoning if necessary.
– Ladle the chili into bowls and serve hot.
– Top with shredded cheese, a dollop of sour cream, sliced jalapeños, chopped cilantro, or diced avocado if desired.
Enjoy your spicy slow-cooked chili with your favorite toppings and sides like cornbread, tortilla chips, or a fresh green salad. It’s even better the next day as the flavors continue to develop!
