
Here’s a recipe for a healthy homemade version of General Tso’s Chicken:
Ingredients
For the Chicken:
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tbsp cornstarch
- 1 tbsp olive oil
For the Sauce:
- 1/4 cup low-sodium chicken broth
- 2 tbsp low-sodium soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 2 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tsp cornstarch mixed with 1 tbsp water (slurry)
For Stir-frying:
- 1 tbsp olive oil
- 2-3 dried red chilies (optional, for heat)
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 2 green onions, chopped
- Sesame seeds for garnish (optional)
Instructions
- Marinate the Chicken:
- In a bowl, combine the chicken pieces with soy sauce, rice vinegar, and cornstarch. Mix well and let it marinate for about 15-20 minutes.
- Prepare the Sauce:
- In a small bowl, whisk together the chicken broth, soy sauce, hoisin sauce, rice vinegar, honey (or maple syrup), and sesame oil. Set aside.
- Cook the Chicken:
- Heat 1 tbsp of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and cook until they are golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Stir-fry the Vegetables:
- In the same skillet, add another tbsp of olive oil. Add the dried red chilies (if using) and stir-fry for about 30 seconds.
- Add the minced garlic and ginger, and stir-fry for another 30 seconds until fragrant.
- Add the chopped red bell pepper and broccoli florets. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.
- Combine and Cook:
- Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir to combine.
- Add the cornstarch slurry (cornstarch mixed with water) to the skillet and stir well. Cook for another 2-3 minutes until the sauce has thickened and everything is well-coated.
- Serve:
- Remove from heat and garnish with chopped green onions and sesame seeds, if desired.
- Serve hot with steamed brown rice or cauliflower rice for a healthier option.
