Chicken Zoodle Soup Recipe
Ingredients:
- For the Soup:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded (use rotisserie chicken for convenience)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 medium zucchini, spiralized into zoodles
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Vegetables:
- Dice the onion, carrots, and celery.
- Mince the garlic.
- Sauté the Aromatics:
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add Vegetables and Broth:
- Add the diced carrots and celery to the pot, and cook for another 5 minutes, stirring occasionally.
- Pour in the chicken broth, and bring the mixture to a boil.
- Simmer the Soup:
- Once the soup is boiling, reduce the heat to a simmer.
- Add the shredded chicken, dried thyme, and dried oregano.
- Season with salt and pepper to taste.
- Let the soup simmer for about 20 minutes, allowing the flavors to meld together.
- Prepare the Zoodles:
- While the soup is simmering, spiralize the zucchini into zoodles using a spiralizer. If you don’t have a spiralizer, you can use a vegetable peeler to create thin zucchini ribbons.
- Combine Zoodles with Soup:
- Add the zoodles to the soup during the last 3-5 minutes of cooking to soften them slightly but maintain a bit of crunch.
- Serve:
- Ladle the soup into bowls, making sure to include both the broth and a good portion of the vegetables and chicken.
- Garnish with freshly chopped parsley.
- Serve hot and enjoy!
Tips:
- For a Low-Carb Option: Ensure the zoodles are cooked just until tender to keep them from getting mushy.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. The zoodles may soften more in storage, so you might want to add them fresh when reheating.
- Additions: For extra flavor, consider adding a splash of lemon juice or a pinch of red pepper flakes.
Enjoy your delicious and healthy Chicken Zoodle Soup!
