
Chicken Spring Rolls Recipe for 4 People:
Ingredients:
For the Filling:
- 1 pound (450g) boneless, skinless chicken breasts, finely chopped or minced
- 1/2 cup bean sprouts
- 1 cup julienned carrots
- 1/2 cup thinly sliced shredded Ginger
- 1/2 cup chopped mushrooms
- 3 green onions, finely chopped
- 2 stalk of Thai basil leaves
- 2 tablespoons soy sauce
- 1 tablespoons five spices
- 1 tablespoon oyster sauce
- Salt and pepper to taste
For the Wrappers: 12. 12 spring roll wrappers (8-inch size)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for sealing the wrappers)
For Frying: 14. Vegetable oil for frying
Dipping Sauce: 15. 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- Red pepper flakes (optional for spice)
Instructions:
1. Prepare the Filling: a. In a pan, add vegtable oil and cook the minced chicken with mushrooms, five spices, soy sauce. b. In a small bowl, add ginger, carrot, green onion and Thai basil leaves. Then whisk together soy sauce, oyster sauce, salt, and pepper. c. Pour the chicken and mushrooms with vegetable mixture, tossing until well combined. Set aside.
2. Prepare the Wrappers: a. Lay out a spring roll wrapper on a clean surface, with one corner pointing towards you. b. Place a generous tablespoon of the chicken and vegetable mixture near the bottom corner of the wrapper. c. Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly. Seal the edge with the cornstarch-water mixture. Repeat for the remaining wrappers.
3. Heat the Oil: a. Heat about 2 inches of vegetable oil in a large, deep skillet or pot to 350°F (175°C).
4. Fry the Spring Rolls: a. Carefully place the spring rolls in the hot oil, a few at a time, and fry until golden brown, turning occasionally for even cooking. This should take about 3-4 minutes per batch. b. Use a slotted spoon to remove the spring rolls and place them on a paper towel-lined plate to drain excess oil.
5. Make the Dipping Sauce: a. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and red pepper flakes (if using).
6. Serve: a. Serve the chicken spring rolls warm with the dipping sauce on the side.
