Chicken Okonomiyaki is a delicious Japanese savory pancake that combines chicken and various vegetables. Here’s a recipe for a 4-person serving:
Ingredients:
For the Batter:
- 2 cups all-purpose flour
- 1 1/2 cups dashi stock (or water)
- 2 eggs
- 1 tsp soy sauce
- 1 tsp salt
- 1/2 tsp sugar
For the Filling:
- 2 cups cooked chicken, diced or shredded
- 2 cups shredded cabbage
- 1/2 cup chopped scallions
- 1/2 cup grated carrot
- 1/4 cup sliced shiitake mushrooms
- 1/4 cup chopped red bell pepper
- 1/4 cup corn kernels (fresh or frozen)
- 1/4 cup tenkasu (tempura crumbs)
- Optional: 1/4 cup pickled ginger (beni shoga)
For Toppings and Garnishes:
- Okonomiyaki sauce (store-bought or homemade, a mixture of ketchup and Worcestershire sauce works well)
- Japanese mayonnaise
- Aonori (seaweed flakes)
- Katsuobushi (bonito flakes)
Instructions:
- In a large mixing bowl, combine the all-purpose flour, dashi stock (or water), eggs, soy sauce, salt, and sugar. Whisk until you have a smooth batter. Set it aside.
- Add the cooked chicken, shredded cabbage, chopped scallions, grated carrot, shiitake mushrooms, red bell pepper, corn kernels, and tenkasu to the bowl with the batter. Optionally, add pickled ginger for extra flavor.
- Gently fold all the ingredients together until the batter evenly coats the vegetables and chicken. Be careful not to overmix; you want the mixture to hold together but not be too smooth.
- Heat a large non-stick skillet or griddle over medium heat and add a bit of vegetable oil.
- Pour a portion of the mixture onto the skillet to form a pancake, shaping it into a round or oval shape, about 1/2 inch (1.3 cm) thick. You can make smaller individual pancakes or one large one depending on your preference.
- Cook for about 4-5 minutes on one side until it becomes golden brown and slightly crispy.
- Carefully flip the okonomiyaki using a spatula and cook the other side for another 4-5 minutes until it’s cooked through.
- Remove the cooked okonomiyaki from the skillet and place it on a serving plate.
- Drizzle okonomiyaki sauce and Japanese mayonnaise over the top. You can make decorative patterns if you like.
- Sprinkle with aonori (seaweed flakes) and katsuobushi (bonito flakes).
- Repeat the process to make additional okonomiyaki if needed.
- Serve your chicken okonomiyaki hot, and enjoy!
Feel free to customize your okonomiyaki with additional toppings like bonito flakes, nori (seaweed strips), or additional sauces to suit your taste. It’s a fun and delicious dish to enjoy with friends or family.
