
Chicken Masala with Basmati Rice for 4 persons.
Ingredients:
For Masala Chicken:
- 1 kg chicken, cut into pieces
- 2 large onions, finely chopped
- 3 tomatoes, pureed
- 1/4 cup vegetable oil
- 1/2 cup yogurt
- 2 tablespoons ginger-garlic paste
- 2 tablespoons garam masala
- 1 tablespoon coriander powder
- 1 tablespoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Fresh coriander leaves for garnish
For Basmati Rice:
- 2 cups basmati rice, washed and soaked for 30 minutes
- 4 cups water
- 2 tablespoons ghee
- 4-5 green cardamom pods
- 4-5 cloves
- 2-inch cinnamon stick
- Salt to taste
Instructions:
- Prepare Masala Chicken: a. Heat oil in a large pan or pot. Add chopped onions and sauté until golden brown. b. Add ginger-garlic paste and sauté for 1-2 minutes until the raw smell disappears. c. Add chicken pieces and cook until they are browned on all sides. d. Add pureed tomatoes, yogurt, garam masala, coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well. e. Cover and cook on medium heat until the chicken is tender and the masala is well-cooked. Stir occasionally. f. Garnish with fresh coriander leaves and set aside.
- Prepare Basmati Rice: a. In a separate pot, heat ghee. Add green cardamom pods, cloves, and cinnamon stick. Sauté for a minute until aromatic. b. Drain the soaked basmati rice and add it to the pot. Stir gently to coat the rice with the spices. c. Add water and salt. Bring it to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and the water is absorbed.
- Serve: a. Fluff the cooked basmati rice with a fork and transfer it to a serving platter. b. Spoon the prepared Masala Chicken over the bed of rice. c. Garnish with additional fresh coriander leaves. d. Serve hot with raita or a side salad.
