Here’s a simple recipe for steak burritos:
Ingredients:
For the steak marinade:
- 1 lb flank steak or skirt steak
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/4 cup olive oil
- Juice of 1 lime
- Salt and pepper to taste
For the burrito filling:
- 4 large flour tortillas
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- 1/2 cup salsa (store-bought or homemade)
- 1/4 cup sour cream or Greek yogurt
- 1 avocado, sliced
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
Instructions:
- Marinate the Steak:
- In a bowl, combine minced garlic, ground cumin, chili powder, paprika, dried oregano, olive oil, lime juice, salt, and pepper.
- Place the steak in a shallow dish or resealable plastic bag, and pour the marinade over the steak. Make sure the steak is well-coated with the marinade.
- Cover the dish or seal the bag and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
- Cook the Steak:
- Preheat grill or grill pan over medium-high heat.
- Remove the steak from the marinade and discard any excess marinade.
- Grill the steak for about 4-6 minutes per side, or until desired doneness (medium-rare, medium, etc.).
- Remove from heat and let it rest for 5 minutes. Then, slice the steak into thin strips against the grain.
- Prepare the Burrito Assembly:
- Warm the flour tortillas in a skillet or microwave to make them pliable.
- Lay out each tortilla and evenly distribute the cooked rice, black beans, grilled steak slices, shredded cheese, salsa, sour cream or Greek yogurt, and sliced avocado down the center of each tortilla.
- Roll the Burritos:
- Fold in the sides of the tortilla over the filling, then roll up tightly from the bottom to enclose the filling.
- Place the burritos seam-side down on a plate or baking sheet.
- Serve:
- Optional: You can toast the assembled burritos on a skillet or grill pan for a crispy exterior.
- Garnish with chopped fresh cilantro and serve with lime wedges on the side.
Enjoy your homemade steak burritos! You can also customize the fillings to your liking by adding ingredients like sautéed peppers and onions, guacamole, or different types of cheese.
